Ingredients
- 1 small sweet potato (100g), cut in 1/2 cubes
- 2 tsp ghee
- 1 small bel pepper, diced
- 1/8 onion, diced
- 2 oz smoked salmon (56g)
- handful spinach
- 1 egg
- salt and pepper to taste
Instructions

Preheat oven to 400F.
Toss 1 tsp ghee, salt and sweet potato cubes together. Place on prepared baking pan and bake for about 20 min or until done.
Add remaning ghee, bell pepper, onion to a pan and cook on medium low until well done. Once sweet potato cubes are done, add to the pan along with spinach. Keep on low heat. Mix and make a small hole in center. Crake in egg. Season egg with salt and pepper. Cover and cook 2-3 more minutes. Place on a plate adding smoked samlon on top. Enjoy!
