Ingredients

- 1 tsp ghee
- ¼ small onion - diced
- 3 mushrooms - sliced
- 3 sun-dry tomatoes – sliced
- Handful of arugula
- Salt and pepper to taste

Crack the eggs into a bowl and mix with salt and pepper. Fry the onion for about a minute in a medium-high non-stick pan with the ghee, then add the sliced sun-dried tomatoes and mushrooms for an additional 3-4 minutes, stirring occasionally. Pour the egg mixture into the pan, spread it, lower the heat and cover. After a few minutes, turn over. When the omelette is cooked, put it on a plate and decorate with arugula.
