Ingredients


    • 2/3 cup gluten free rolled oats
    • 1/4 cup almond milk
    • 1 egg
    • Pinch of cinnamon
    • 1/2 tbsp coconut oil

    Toppings:

    • 4 tbsp cottage cheese
    • 1 tbsp honey
    • hanful blueberries

Instructions


    Blend oats in a food processor to make flour (or you can use 1/2 cup oat flour instead). Add the rest of the ingredients (except coconut oil) and mix few more seconds. Heat a non stick pan on medium high heat with coconut oil. Shape 4 pancakes from the mixture. Fry about 2 minutes on each side. Place on a plate. Top each pancake with cottage cheese then add blueberries and drizzle with honey. Enjoy!
