Ingredients
- 2 cans red kidney beans
- 4 tbsps (melted) coconut oil
- 3/4 cup erythritol
- 2/3 cup cocoa powder
- 4 small eggs
- 1 ½ tsps baking soda
- 32 oz. organic cream cheese (philadelphia)
- ½ cup erythritol
- 3-4 tbsp plant or regular milk
- 12 medjool dates (about 1 ½ cup)
- 3 tbsps almond/peanut butter
- 4 tbsps water (from dates soak)
- 1/3 cup unsalted peanuts
- 1/3 dark chocolate bar (at least 70% cocoa)

Brownie
Rinse the beans under running water. Let them dry out. Then blend all ingredients until combined together in single texture. Bake for about 40 minutes at 360F. Set aside until cool.
Cheese Filling
Blend all ingredients very well and pour on to cooled brownie. Put in the fridge for about an hour.
Carmel Topping
Soak dates for about 15 minutes in hot water, leave water (may be needed).
Roast peanuts on a hot/dry pan until nice and slightly brown. Set aside. Blend dates with almond butter until smooth texture. Add “date water” if necessary. Toss more than half of peanuts into the caramel mixture and mix with spoon very well. Gently spread the caramel on the cheese filling (what I do is slightly soak a spoon in water and it is easier to spread) then sprinkle the rest of the peanuts on top. Melt the dark chocolate over hot water/steam in a cup/bowl, then pour it over the caramel creating your own design! Refrigerate for couple hours to cool and enjoy your healthy cake!
