Ingredients


    • 1 medium size beetroot
    • 1 tbsp sunflower seeds
    • 2 tbsp goat cheese
    • romaine lettuce (about 6 leaves) or 2 handful spinach
    • handful cranberries or strawberries
    • 1/2 tsp coconut oil
    • 2 pinches paprika powder
    • salt
    • 2 tsp honey
    • 1 1/2 tsp mustard
    • 1 tsp lemon juice

Instructions


    Peel the beet and cut into thin slices. Spread coconut oil over the beets and flavor in salt and paprika powder. Cover with a foil and bake for 30 minutes at 375°F. Place prepared beets over shredded salad, add goat cheese, cranberries and sunflower seeds. Pour dressing over the salad. Enjoy!

    Dressing: mix honey + mustard + lemon juice very well. Pour over the salad and enjoy!
