Ingredients
- 2 eggs
- 2 tbsp oats (I use gluten free)
- pinch of salt
- 1 small banana (thinly sliced)
- 1/4 tsp cinnamon
Instructions

Crack eggs in to a bowl and mix with oats, salt and let set aside for about 5 minutes. Add banana, cinnamon and stir. Heat coconut oil in a pan over medium high heat. Pour the mixture into the pan, cover and reduce heat. Flip over after couple minutes. You can serve as it is or with any toppings like peanut butter/fruits.
