- 3 mushrooms – slices
- ¼ red pepper – diced
- 2 thin slices regular or turkey bacon (additive free) – diced
- ½ tsp ghee
- Handful of spinach or arugula – chopped
- Salt and pepper to taste

Grease a ramekin with ghee. Place mushrooms, pepper and spinach into the ramekin. Crack eggs into a bowl and mix in spices. Pour mixture into prepared ramekin. Garnish with diced bacon. Baked at 360F for 10 – 15 minutes.
