Ingredients


    • 3 small eggs
    • 3 mushrooms – slices
    • ¼ red pepper – diced
    • 2 thin slices regular or turkey bacon (additive free) – diced
    • ½ tsp ghee
    • Handful of spinach or arugula – chopped

    Spices

    • Salt and pepper to taste

Instructions


    Grease a ramekin with ghee. Place mushrooms, pepper and spinach into the ramekin. Crack eggs into a bowl and mix in spices. Pour mixture into prepared ramekin. Garnish with diced bacon. Baked at 360F for 10 – 15 minutes.
